For this Cuvée Miel, we blended a three-year-old honey lambic with a young lambic in a ratio of 66/34. During the brewing of the oldest part, in early 2022, we added honey from our own Schaerbeek cherry orchard to the cooling lambic wort. We did the same during the blending process. The weighted average age of this blend was more than 28 months at the time of bottling. Almost all grains are produced locally in the Pajottenland. 100% 3 Fonteinen.
